The most requested recipe for our classes held at Wildwood Farm is for our host's egg salad! Mark Lyons sent me his 'secret' recipe to share...enjoy!
Mark’s Famous Egg Salad
(Makes 2 1/2 cups, enough for 4 sandwiches)
6 hard-cooked eggs
1/4 cup mayonnaise
2 tablespoons minced red onion
1 tablespoon minced fresh parsley
½ celery rib, chopped fine
2 teaspoons Dijon mustard
2 teaspoons lemon juice
1/4 teaspoon salt
Pepper, to taste
Cut peeled eggs into medium dice. Mix diced eggs with other ingredients in medium bowl, including pepper, to taste. Serve. (Can be refrigerated in airtight container for one day).
